Tofu burger with carrot puree from Gregous Food

Tonight I have received my new tripod that will make my life easier to take pictures, especially from above. So I had to think quick what I could do for dinner. I had tofu, so I checked a little bit for inspirations and there was a burger with quinoa. I thought I can probably do the same recipe more or less but with tofu, and I was looking for a colourful vegetables that could make a splash on the picture: Carrots are perfect.

Serves 2

What do you need?

  • 220g of Tofu
  • 40g of breadcrumbs
  • 1 egg
  • 2 carrots
  • 1 small potato
  • 3 tbsp of Gorgonzola with Mascarpone or 1 tbsp of Gorgonzola
  • 15g of butter
  • 1 shallot
  • Chive
  • Salt, black pepper, garlic, spices (greek one or anything that gives a mediterranean taste)

Steps:

For the burgers:

  • Mix in a blender together the chive and shallot first and add tofu and blend only a little to keep some texture
  • Add the salt, black pepper, garlic, greek spices and 1/2 beaten egg
  • Add the breadcrumbs and mix well altogether
  • Form some round burger helping you of a round form
  • Set aside

For the purée:

  • Peal, cut and boil the carrots and potatoes with salt for about 15mn or until soft
  • Remove water and mash
  • Add the 1/2 beaten egg, gorgonzola and butter
  • Add salt and black pepper to your taste
  • Mix with a blender to obtain a nice soft and colourful texture

Fry the tofu burger for 4mn each side more or less and serve with the purée on side
