Mountain salad

I have a problem with salads, I can never do it basic with just green salad, tomatoes and olives. Always have to add a millions of things and in the end it is a busy plates. So just be easy on the quantities 🙂

 

Serves:

What do you need?

  • 200g of spinach leaves
  • 3 eggs
  • Half a baguette
  • Goat cheese
  • 2 potatoes
  • 2 tin of Tuna
  • 1 big tomatoe
  • Half a tin of green olives
  • 1 tea spoon of butter
  • Olive oil
  • Dry fruits & nuts
  • Dry onions (the one sold at Ikea shop are quite fine)
  • Honey
  • Salt, black pepper, oregan, fresh parsley, 2 garlic cloves

 

 

Steps:

  • Cut the potatoes in small pieces and stir in a pan with olive oil, some garlic thinly cut, parsley and black pepper
  • Cut the tomato in tiny pieces
  • In a small cup, add thinly cut garlic, the butter and 1 spoon of olive oil and heat up for about 30s
  • Boil some hot water
  • In a deep plate, place the spinach leaves
  • Add the tomatoes and tuna on top
  • Add the potatoes on the side
  • Spread a few olives and dry nuts & fruits
  • In the boiling water, cut the eggs to do poached eggs. There’s different techniques to succeed. I’ll post a few later
  • Cut the baguette in 9 slices
  • Take 3 slices, toast them and spread the garlic butter
  • Prepare the other 6 slices with a slice of goat cheese, add some honey on top and oregano. Put in the oven under the grill until golden
  • Add on slide of the plates
  • Serve with some olive oil and vinegar or choice of salad sauce
