I had the chance for a few years to be part of a Jewish family and I must say that I miss the great food of Savta. Of course I’ve learned a few recipes but a few of them are still missing from my books.
Yesterday I tried the potato latkes also known as potato pancakes. There was nice but maybe not crispy enough, next time I will flatten them more.
What do you need?
- 2 potatoes
- 1 small onion
- 1 egg
- About 50g of flour
- Salt and black pepper
I’ve cut the potatoes in thin layers with my Kitchenaid and then with the knives to make small “spaghettis”. You can also use a mandolin. Cut the onions in small pieces.
In a large bowl mix the egg and flour, add salt & pepper and then add the potatoes and onions. Stir everything together until you get a smooth texture.
Eat up some oil, you actually don’t need to put so much for it to be nice. Drop some of the mixture in the pan, flatten it with a tablespoon (or plastic spoon if like me you use Tefal pans). Let it fry until golden on both sides. Reserve on kitchen paper to absorb the excess of oil.
It can be eaten as appetiser, with aubergines caviar or as side dish too.
