Courgettes & goat cheese terrine

Today I thought I would get busy while cooking my lentils and I wanted to try for some time already these thin courgettes slices in the oven. It can be improved I think but it’s not too bad

What do you need?

  • 1 courgette
  • Goat cheese (fresh goat cheese is probably better)
  • Olive oil
  • Salt, pepper, herbs de provence

Pre heat the oven at 180°. Peel the courgettes and cut very thin slices using your potato peeler or a ‘mandoline’. Place it on a baking paper that you’ll spray of oil before. Salt, pepper &  herbs. Spray a bit more of olive oil.

Let it bake for about 20mn or until you see the courgette is cooked and starts to get brown-ish.

Then place on a plate or in a terrine as shown on the picture and add the goat cheese
