Courgette, carrots, surimi and tuna flan

Tonight I’ve cooked a flan of courgettes, because it’s a vegetable that is good for the diet. It is served with a red pepper jam made by Carol, a friend of Juan What do you need?

  • 1 large courgette
  • 2 big or 4 small carrots
  • 8 surimi sticks
  • 1 box of tuna (I only buy tuna in water, never in oil)
  • 1 onion, 1 shallot
  • 1 garlic clove
  • Salt, pepper, thyme, parsley and herbes de provence
  • 5 eggs
  • 20cl of cream (creme fraiche o cooking cream)
  • 3 tablespoon of flour

First cut the courgette and carrots with your kitchenaid (or equivalent) to get it thinly cut in pieces. Eat up some olive oil, fry the onion, shallot and garlic that you previously cut in small pieces. Before it gets brown, stir in the courgette and carrots and cook for 10mn until there’s no more water from the courgette. Add salt, pepper, thyme, parsley and herbs de provence. In the meanwhile, mix the 5 eggs and cream together, add a bit of salt and black pepper. Cut the surimi in tiny pieces and it along with tuna into the eggs mixture. Then add the vegetables. Mix well all the ingredients and poor into a baking tray that you have previously buttered to ensure it doesn’t stick. Bake in the oven using ‘bain marie’ for 1hr at 180°. Cover with foil paper after 30mn or when starting to get brown to ensure it doesn’t burn. Serve with a red pepper jam (this was made by Carol, a friend of Juan) for example and if you don’t have, make some toasts of goat cheese.

  1. hehe thanks Lynz 🙂 It was a healthier way than cooking “choux” or chocolate fondant that I really wanted to do …. it’s not compatible with the beach holidays later this year 😮
