What do you need?
- 1 mascarpone (250g)
- 3 big eggs
- 60g of brown sugar
- Vanilla (sugar or essence)
- 1 pack of speculos biscuits (i buy the Lotus one)
Separate the white from the yolk. Mix the yolk with the brown sugar and vanilla. Once the texture is smooth mix the mascarpone and reserve.
Mix the white eggs with a pinch of salt until firm. Then add the white eggs little after little in the mascarpone preparation and reserve in the fridge for 1hr.
Start reducing the speculos into pieces/power. You can either smashed them all, or keep half to put at the bottom. I prefer to have it all fully mixed, but many people just put the entire biscuit in the bottom with a bit of coffee or amaretto. I don’t like coffee so i don’t put anything. I like that the speculos is a bit crunchy still when i eat it.
In a recipient, poor half of the speculos, then add the mascarpone mixture and finish by topping with the rest of the speculos.
Keep in the fridge for 1hr and serve when ready.
